A fast way to prepare a traditional Russian dish
- Flour: 700 grams
- Water: 250 grams
- Onion: 2 pcs
- Pork mince: 250 grams
- Beef mince: 250 grams
- Salt, Pepper
- Put the flour into a big recipient. You can use a glass to measure the amount.
- Make a hole in the middle and pour a glass of water into the flour.
- Add a half tea spoon of salt.
- Mix all ingredients with a spoon first then use your hands to work with the dough.
- Once the dough is firm and unified, cover it iwht a transparent film and leave it to rest in a warm place for about 30 - 40 minutes
- Pill and cut the onions. It is better to cut onions in very small pieces.
- Add onion to the mince and mix them together. Add salt depending on your taste. For a mild saltiness you need 2 tea spoons. You can add pepper as well.
- Prepare a big flat surface for rolling out the dough. Spread a little bit of flour to prevent the dough sticking to the surface.
- Roll out the dough in a thin sheet using the rolling pan.
- Take a clean glass and press on the dough to cut out circles.
- Take equal portions of the mince filling, make meat balls, and palce that in the middle of each circle until all circles have meat.
- Take a board or another flat surface where you will put Pel'meni. Spread a little bit of flour over it.
- Take one dough cirlce with the meat. Pull a little bit the edges of the dough if necessary. Close the dough first creating the half moon shape and then stick the corners together.
If you are preparing Pelmeni for a party like the New Year's Eve, you can add, for example, raisins into few of them. Whoever gets Pel'meni with raisins inside, will be lucky in the New Year!
If you have some dough left, you can make another thin sheet and make more Pel'meni! If you have some meat left, you can make more dough.
Once all Pelmeni are shaped, it is better to store them in the freezer. It is also better to freeze them for at least 2 hours before cooking. it will prevent them from sticking.
- Boil water in a cooking pot. Add one spoon of salt and 3 bay leaves.
- Once water starts boiling, add frozen Pelmeni. Stir gently to prevent them from sticking to the walls of the pot.
Pelmeni are ready when they float on the surface of the boiling water. Serve Pelmeni to a plate. Add sour cream, butter or vinegar if desired.
